1 middle size eggplant
1 can of your favorite tomato sauce
1 cup light Mozzarella cheese or parmesan cheese
1 can of your favorite tomato sauce

Preheat oven at 350
Spray cookie sheet with non stick cooking spray and set aside. Cut eggplant into half inch thick slices, put them on a cookie sheet and roast them for about 15-20 mins or until tender.
Once the eggplants are done roasting, take them out and begin to put about 1-2 tablespoons of tomato sauce on top of the eggplants then finish them off by topping them with cheese.
Put them back into the oven for about 15 mins or until cheese is melted. Then enjoy! ;)
**add ground chicken/turkey, or turkey pepperoni on top of the sauce for extra protein. Or add sautéd chopped veggies or herbs into the sauce for extra fiber and flavors**
